Quick Tiramisu Cups

You'll need

• 1 cup mascarpone (or cream cheese, softened)
• 1 cup heavy cream
• ⅓ cup sugar + 1 tsp vanilla extract
• The soak: ¼ cup QuicKafe concentrate + ¼ cup water
• About 12 ladyfinger cookies
• Cocoa powder for dusting

How to make it

1. Whip the cream with the sugar to soft peaks, then fold in the mascarpone and vanilla.
2. Dip each ladyfinger briefly — one second per side — in the coffee soak and layer into four glasses, alternating with the cream.
3. Chill 2 hours, dust generously with cocoa, accept compliments.
